Before the mid 1990s, most groceries were sold at local and regional chains. But the rise of Walmart led to a wave of supermarket mergers.

Walmart’s sheer size allows it to dictate terms and prices to suppliers and workers and small, innovative food companies often cannot get their products onto store shelves.
